This was inspired by a dish that chef Jordan thoroughly enjoyed on a trip to Mexico as surely many of you have as well! It’s essentially (really delicious & awesome) homemade chorizo crumble, baked in a layer with caramelized onions & poblano peppers and then topped off with a healthy dose of cheese. And as if this wasn’t enough it’s served with the most delicious homemade tortilla chips for dipping.

The most delicious homemade tortilla chips are on every bar top and served with just about every meal in just about every restaurant in Mexico… by hand cutting corn tortillas and frying them ourselves we get about as close to recreating this experience in your own home as you can get.

The main event-
Shredded Mayan BBQ Beef Tacos

We make our own Mexican spice rub with ancho chili powder, oregano, cumin, cinnamon, clove & garlic and let that marinate on AAA black Angus beef chuck overnight. We then char it on the grill and slowly braise it for many hours until it’s so tender it’s falling apart.

Shaved Cabbage Slaw
House pickled red onion, house pickled jalapeno & fresh cilantro

Soft Flour Tortillas & Lime Crema Drizzle

Tomatillo Salsa Verde
Charred onion, garlic, chili’s, lime & cilantro
